Poached Apples and Vanilla Yogurt recipe


  • 1 1/2 c. red wine (such as Syrah or Zinfandel)
  • c. sugar
  • 1/3 c. orange juice
  • c. orange peel
  • c. lemon peel
  • 1 cinnamon stick
  • 1 whole star anise
  • 4 medium apples (Such as Pink Lady or Braeburn)
  • 1 c. Greek style yogurt
  • 1 Tbsp honey
  • 1 vanilla bean, split lengthwise


  1. In large saucepan combine wine, sugar, orange juice, orange peel, lemon peel, cinnamon stick, star anise, and 2 cups water. Stir and bring to a boil over medium heat, constantly stirring until sugar is dissolved.

  2. Peel and core apples. Place apples in saucepan and reduce heat to low. Simmer 25-30 minutes, occasionally rotating apples until they are tender when pierced with a sharp knife.

  3. Transfer apples to a plate and set aside. Strain poached liquid into a small saucepan, discarding solids. Return saucepan to heat and simmer, stirring occasionally, until liquid has reduced to a thick syrup.

  4. In small bowl, combine yogurt and honey. Scrape in seeds from vanilla bean, and whisk together until yogurt is smooth and well blended.

  5. Divide yogurt among plates. Top with apple and drizzle liberally with syrup. Serve hot.
